Zucchini “Tots”

Mmm. I was really excited about today’s recipe. I love zucchini. I love it sliced up and grilled, added to pastas, steamed, you name it. But I knew I wanted to try something new and amazing–enter “Zucchini Tots!”

I decided to test this recipe out on some friends of ours who came over for dinner on Sunday night. I wasn’t quite sure what they’d think of my crazy recipe, but I think it’s all part of the fun to feed weird things to people and see what they think (is that sick and wrong?).

This recipe is filled with veggie goodness and amazing pops of flavor. It ended up being the perfect appetizer–I bet even non-zucchini lovers might be converted!

2 cups grated zucchini

2 eggs, beaten

1/2 an onion, diced

1/2 cup shredded cheddar cheese

1/2 cup breadcrumbs

1/2 tablespoon Italian seasoning

dash of salt and pepper

Here’s what you do:

Preheat your oven to 400 degrees and spray a mini muffin tin. Mix all ingredients together in a bowl, then use your hands or a spoon to fill each muffin cup. I ended up with about 20 of them. Bake for 15-18 minutes, or until the tops are nice and browned (I left mine in a bit longer because I wanted the tops a little crispier).

The Verdict? Everyone loved these. My husband said they tasted like Stovetop stuffing, which is one of his favorite foods–and it’s healthier than Stovetop because it’s packed with veggies! I wouldn’t think twice about serving these again, and am actually planning on making some more for the hubby this week. It’s soo quick and easy too.

Please please do me–and yourself!–a favor and try these ASAP. You won’t regret it. 🙂
