Strawberry Heaven Protein Oatmeal

Here’s another one of my faaaaavorite ways to eat oatmeal (and boy do I have a lot of them, as you’ll see in upcoming posts!!)

Ingredients:

1/2 cup old-fashioned oats

Sweetener of choice, to taste

Cinnamon, nutmeg to taste

Raisins (I probably use about 20)

1 2/3 cups water

3 egg whites

1 cup fresh or frozen strawberries, sliced in half

Cranberries (I use a small handful)

2 T chopped walnuts

dash salt

Directions:

This starts the same way as some of my other oatmeal recipes: Stir together the oats, sweetener, cinnamon, nutmeg, and raisins in a LARGE microwave-safe bowl. Add the water and microwave for about six minutes, depending on your microwave (after six minutes mine has absorbed most of the water). Stir in the egg whites and microwave for about three more minutes, just to make sure the egg whites get cooked. Then add your strawberries and microwave for two to three more minutes (this will of course depend on whether yours are frozen or fresh). Finally, add your cranberries and cook for another 2 minutes. Stir in your walnuts and salt, let cool (if you can–it looks so good when it’s done!), and enjoy!
